Vegan Chocolate Mousse


This is a high fibre, high protein, healthy, smooth vegan pudding. Each portion has 12-13g of fibre and 8-9g of protein.

You can use a crunchy nut butter if you like a bit of crunch in your dessert. You're also welcome to substitute the water with a milk of your choosing for extra creaminess and more protein.

For added protein, chocolate protein powder can be used instead of cocoa powder.

5 minutes to make. Serves 2.

Ingredients:

  • 1 ripe avocado

  • 2 ripe bananas

  • 2 tbsp cocoa powder

  • 3 tbsp maple syrup (or other sweetener)

  • 2 tbsp peanut butter (or other nut or seed butter)

  • 1/4 cup water

  • Optional: pinch of cinnamon and/or ginger

Directions:

  1. Set one banana aside for the topping.

  2. Place all the other ingredients in a blender and blend until smooth.

  3. Pour into dessert bowls and top with sliced banana pieces, or any other fruit or nuts.
