Nutty Breakfast Quinoa


This warm and nutty quinoa dish can be served for breakfast, dessert, or at any other time you like. The berries give it a tantalising sweet, dessert-like taste.

For a creamier end result, use more milk instead of water. For a vegan friendly version, a plant based milk can be used instead.

15 minutes to make. Serves 2.

Ingredients:

  • 1/2 cup quinoa

  • 1/2 cup water

  • 1/2 cup milk of your choosing

  • a pinch of salt

  • 1/4 tsp ground cinnamon

  • 2 tsp raw honey, maple syrup or other sweetener

  • 2 tsp desiccated coconut

  • 2 tbsp fresh or dried berries

  • a handful of nuts


Directions

  1. Place the quinoa, water, milk, cinnamon, sweetener and salt in a microwave safe bowl and microwave on high for 10-12 minutes until the quinoa pops and becomes translucent.

  2. Serve with berries, nuts and coconut on top.
