Baby Spinach and Chicken Salad with Soy Sauce


This salad is perfect for when you have left over chicken and want to incorporate crisp, fresh salad ingredients.

It's one of my favourite light dishes when I'm trying to stay on the keto diet while also aiming to get enough fibre in my day. It could also become a paleo dish by leaving out the soy sauce.

I recently started adding soy sauce to my salads for a nice salty flavour. This saves a lot of calories compare to some other salad dressings.

This salad contains 10g fibre, 20.2g protein, 20.4g fat and 10.5g nett carbs.

5 minutes to make. Serves 1.

Ingredients:

  • 50g cooked chicken (skinless), shredded or sliced

  • 1 cup baby spinach leaves

  • 1/2 cup cucumber, sliced

  • 1/2 an avocado

  • 1 tomato, cut into slices

  • 1 stalk spring onion, chopped

  • a generous splash of soy sauce

  • seeds of choice
