Amarula, Banana, Coconut Mug Cake with Chocolate Sauce
I am a huge fan of Amarula and it complements this mug cake beautifully. This is a moist banana bread-cake with hints of coconut. It goes very well with a bit of healthy chocolate sauce and this peanut butter, banana, protein ice cream.
5 minutes to make. Serves 1.
Mug Cake Ingredients:
1/2 medium banana, mashed
1 tbsp peanut butter, or other nut butter
3 tbsp Amarula or Baileys
1 tbsp coconut flour
1 tsp desiccated coconut
1 tsp honey
Garnish:
1 tbsp Amarula or Baileys
1 tsp desiccated coconut
Single Serving Chocolate Sauce Ingredients:
1 tbsp coconut oil
1 tbsp cocoa powder
1 tbsp honey or maple syrup or other sweetener
Directions:
Place all the mug cake ingredients in a cup and mix well.
Microwave for 2-3 minutes depending on how moist or dry you like your cake.
Place the chocolate sauce ingredients in a second mug and microwave for 1 minute.
(Optional) Stir the healthy chocolate sauce well and pour over the cake.
Pour the Amarula or Baileys garnish over the cake and top with 1 tsp of coconut.
(Optional) Add this peanut butter, banana, protein ice cream.
